So I put the brisket on about 7 hours ago and wrapped it at 170* but it took off and now is at 185* , It will be done too soon, for the folks coming over about 2 PM. How long can I let it rest in a cooler afeter it reaches 200*? Can I cut the temp back to 180* to slow it down with out ruining it? This brisket stuff is a darn science, Pork butts are easy!  |

swampthang, you should be good. let it run to 190° and then wrap it in towels, you can also preheat the cooler with boiling water. Did you check it in several places to verify your temp.? _________________ Always remember slow and steady wins the race.

Well then I would let her get to temp. wrap tight in foil and towels and heat the cooler, you might have a bit before it gets to 190° or so. _________________ Always remember slow and steady wins the race.
