I'm in Dallas & have been cooking, not just BBQ, for as long as I can remember. BBQ my favorite BY FAR. I have been checking out the site for a few weeks. Love what I have read & learned. I am thinking about trying a few competitions just for fun. I'm not in it for a profession, at least not for the next 20-30 years, maybe when I retire. I would like any advice on starting up. I don't even know where to look for local, weekend competitions. I would even organize one myself if I knew enough people. Pecan is my favorite wood to smoke on. I used to have a huge tree & every time the wind blew or we had a little rain, it would give me enough wood to cook a few good weekends. I miss that tree. I have fairly easy access to oak & pear, yes pear, now. It surprised me that it gave my brisket a pretty good flavor. Any help with local dallas events, that I wouldn't have to already have won several to get in, would be great. It sounds like you are a great bunch of people. Thanks for any help!! - oh, by the way I don't have great equipment. I'll smoke in a hole in the ground if I have to.  |

You can try this site for comps in your area. The IBCA is the largest of several BBQ Associations in Tx.

Howdy and welcome to the forum from another dallasite. Lot's of local comps that are not sanctioned. You just have to keep an eye out for these. For instance Addison had some BBQ action going on over St. Patty's day, and they had a small cookout at the rattlesnake roundup in sweetwater.
