This a side that I made one time at the restaurant I work at. It's simple, yet awsome.
Pablano Cream Corn
3-4 roasted pablanos, chopped
2# frozen or canned corn
1-2 onions, chopped
1 tsp oregano
1 tsp rosemary
1 tsp thyme
12 oz heavy cream
salt and pepper
-Sautee onions.
-Add corn, pablanos, cream, rosemary, thyme, and oregano.
-Simmer until cream is thickened.
