Finally got the call to go back to work.....it's a month later than last year.Anyways bought a nice fresh pizza dough and rolled it out and built a Mozzerella,Chedder,Sweet Pepper ,Mushroom and Pepperoni Zaaaa!
I fired up the offset and got a huge bed of oak coal,400 degrees in the center of the cooker, one hour and it was amazing. Very Happy Washed it down with a little dry red wine. Very Happy

Freshly constructed Zaaaaa!

Allmost there.

Done to perfection.

I've always loved the wood fired pizza joints here in chicago, but I've never tried to do one. I'm thinking a good hot clean burning oak fire would do real well there. This item goes on my to-do list.

Great looking zaaaa

CB, what temp. did you get the smoker up to? I have wanted to try this but have wondered if it could be done and get the crispness needed to cook it? I've read you need it in the 650-700 range. From what I see yours looks awesome, I'll need to try this on my WSM. Just my own thoughts, Chi-Town deep dish rules!

I have done tons of pies in my offset,I get it up to 350 -400 degress and put the pie close to the fire box, pies done in 40-50 minutes easy, crust is crisp, golden brown.I usually cook on a stone but today I used a 16 inch pan with the holes in it,worked awesome.
