We did a quiche lunch special for the ladies today at the resto..Sold more than a few, it was the busiest day we have had so far for the place. If I do another Omelet or #%&$ benny this week I will freak out. Did 11 hours today and my dogs are barking...

My dear old Ma was in my thoughts. Will get to spend some time with her this week when I get a day off.

Hope every one gave their Ma a big hug and a smootch and thanked them for not drowning them... Wink

Mom wanted chicken, she got chicken. I spatchcocked about a 5 lb bird, then separated the skin from the carcass. I then rubbed a seasoned garlic butter heavily under the skin, reaching down into the wings and thighs as well.

The yard bird ended up a beautiful color, and was extremely moist and juicy. A fresh batch of home-made pinto beans with buckboard bacon, potato salad, iced tea and SuckleBusters new salsa mix rounded out the meal.

The wife didn't want beef or chicken this year and we did seafood the night before, so we had pork tenderloin... Kept is simple. Just rubbed and grilled. Served with roasted corn and some green beans... Took a some of the juices that accumulated in the plate while the tloins rested and spooned over the pork...

Simple, but she said that I will be doing tenderloins again!
