Ive had mixed results with my BB's in my traeger. Ive tried everything and they are hit and miss. I normally cook them at 220 , Ive tried 5- 6 hours unwrapped, Ive tried 3-2-1, 2-2-1 ,2-1-2 , and they are still hit and miss. Should I try a higher temp, lets ay 250 or there-abouts? I got three racks for today and need advice.
Thanks Mike

235-250 works for me.

Try 1 rack 2-1-1

I like my ribs cooked at a higher temp. Somewhere between 245-275 seems to work best for me.

225 for 3-2-what ever it takes from there,They are done most the time after 4 hours let them rest for the last hour.So 3-2-rest for the last hour still foiled..

I rarely do bb's but I also do mine around 240 and they don't ever take 5 hours. (no foil)...It's usually right after the 4 hour mark.

What don't you like about them?

Swampthing, I have done ribs quite a few times on the Traeger, matter of fact I have 2 racks going right now. I have the three set setting and I put it on medium (225-250). Unfoiled for 2 hours, foiled for about 45 minutes, the unfoiled again for 15 minutes then sauce up and leave on an additional 10-15 minutes. After some trial and error(and eating all the mistakes) this is the method of the 3-2-1- that works best for me. Hope this gets to you in time.

235-250 unfoiled until there done! Hang in there, you will find the sweet spot with your cook/cooker.

Good Luck!

Thanks for the input! Well I made some great strides in the rib department today and it seems my sweetspot is the 250* range. I rubbed em and smoked for 3 hours, sauced em and smoked another hour, all unfoiled. DELICIOUS!!!!!!!!! not perfect yet but close. I see some folks let them rest an hour ,, is that wrapped or unwrapped? Ill try that next week! sorry no pics taken!

I do have a you-tube vid of a pork butt me and my 12 yo daughyer made a few weeks ago

My advice would be to sell that Treager and get yourself a WSM/ProBBQ so you can cook up some really good BBQ..

I have used a Treager more than a few times and I was never truly pleased with the results, but that is me and I know there are more than a few folks who have them and get the results they want.. Just never smokey enough for my tastes.

Just my 2 cents... Wink

Time out! Let's not digress into that arguement! Smile

Just did my first comp on a Traeger and my ribs took 8/44...not to shabby if you ask me!

You cant always figure Judges tastes from my experience.. Wink Laughing

Don't get me wrong.. they are a wonderful cooker and I have got calls using them as well, I just cant get the smokiness I like.. Maybe if I was able to experiment more I could get the finished product to where I want it.. But with the old fashioned equipment I use I get that every time and I have got many more calls with them.

Congratulations on your call in your first comp. That is an accomplishment to be proud of.. And I mean that, all kidding aside.
