Does it matter if you wrap the butt in foil after you put the rub on, while it's still in the fridge?My buddy says yes,just wondering what the pros do.

What do mean wrap?Foil..We slather,then rub,wrap in plastic wrap overnight.Then when We put them on of course unwrap and smoke till 190-200.Then foil and let rest in a clean dry cooler wrap them with dry towels.They will stay pipeing hot until served..Hope this answers the ?.. If it doesnt repost with any further ?

Thanks for the reply,was just wondering if it is necessary to wrap the butt in foil or saran wrap while you let the rub soak in.

No Not at all. I think it helps,but is not a must..But We do wrap all of our meats with plastic wrap..Good Luck

Turbo24, if you are going to wrap overnight it is best to use Saran wrap, some spices will react to foil and eat on the foil. I always rub mine down the day of the cook, about an hour before I put them on.

If I put rubbed meat in the fridge with out wrap my old lady would kick my rubbed butt! Laughing

For sanitation sake...please wrap all raw meat products that you keep in your refrigerator...and store them on the bottom shelf.
