I am going to do my first Brisket on my new Klose. I plan to start @275 degrees and go with that till temp of meat is 145. Then I will reduce temp to 235-245 degrees till meat reaches 180 . Going to reduce the temp to 220 degrees till I pull meat off at 195-200 degrees. HOW LONG should should it take to cook a 12 lb. brisket ?
Let me change that to how long SHOULD it take. (ballpark) Thanks in advance.

why the step down in temperatures? why not just run at *250 the whole time. the klose cooker should have no problems holding temps. if you cook at one temp the whole time then if your not happy with the results you dont have to chase down temps as a cause for your results. just my .02 cents.

I like to run at 225 when I cook brisket. I could be wrong but I would think you would want to do your swings the other way so that the brisket takes longer to hit 140 and suck up more of a smoke ring. 225 has always done me good. I think last weekend the 4 13-14 lb briskets took about, I think around 20 hrs but I had some friends over and 4 butts on so the cook wasnt done when the briskets came off.

I did my first brisket a couple weeks ago in Bubba. Homebuilt UDS. 12lb. brisket for 18 hrs at 220 and it was incredible. The reason for the heat and time was because of the fine folks here. Thanks everyone.

225-250 no increase no decrease figure 16-20 hours.It makes for a very long day,but worth it.

My briskets usually average about 1 hour a lb. to cook.

Some guys are taking the fast track with at their briskets and cooking at hight temps for 5 hour or so cooking time. What I want to try is an hr. per lb and the temps I posted were recomended to me. Just wanted to get some other input

Do any of you who cook at 225 wrap also? If so, how long is the cook and when do you warp?
