I wouldn't call it a recipe but whenever we finish off a jar of pickles or better yet pickled jalapenos I always boil some eggs, peel them, and put them in the juice for a few days. If I need a little more liquid to cover them I add some vinegar. |

Here is a great recipe that a friend gave to me.
12 extra large eggs.
1-1/2 cups whte vinegar.
1-1/2 cups of water.
1-1/2 teaspoons of salt.
1 tablespoon pickling spices.
1 clove of garlic - cruched.
1 bay leaf.
Directions
1. Place eggs in a large pot and cover by 2 inches with cold water.
2. Being water to a full rolling boil and immediatly rove from heat.
3. Cover and let stand for 15 minutes.
4. Remove from pan, run under cold water and peel.
5. In a medium pot, mix together the vinegar, water, and salt.
6. Combine the pickling spice, garlic, and the bay leaf in cheese cloth, tie and add to the pot.
7. Being to a boil over medium heat, lower temperature, cover and summer for 5 minutes.
8. Remove spice bag.
9. Transfer the eggs to sterile containers, full with hot vinegar mixture and seal.
10. Allow to cool and refrigerate for at lest right days before serving.

I also like to add the following.
1 tablespoon of mustard seed and 1/2 onion cut up in slices.
1 tablespoon of tabasco or red pepper flakes to give them a little zing.
The onion will leave a sweet after taste.
If you want a little more heat, boil the red pepper flakes with the pickling spice, then add to the jar.

| Put your eggs in whatever size jar you want to use. Fill the jar 2/3 full of vinegar, then top off with Louisiana Hot Sauce or another brand of hot sauce. Also you can add such things as, green beans, sliced onions, mushrooms, carrots, bell pepper, garlic, jalapenos and such ........ It all pickles well. |
