I've never attempted sausage making, but am planning on it for the summer.
In competition, what seems to be the most popular type of sausage from a flavor component/spices point of view?
Is there one style of sausage that is more widely prepared over others: meaning italian, polish, summer, etc.?

| most likely depends on the competition and what they are looking for. The ones around here hardly have a sausage category, just the standard kcbs classes. |

I think most people prefere Italian or some sort of Country Style sausage,I do a sausage called Country Polish and have never had a complaint,everyone loves it. _________________ Horizon Offset (Marshall RD Special)
