Hi gang,

I'm a true newbie. Never bar-b-q-ed anything in my life. But love eating it. Down here, near Memphis, it was always just easier to buy the best and not worry with the cooking. I didn't figure I could beat it anyhow. But now I want to try. I didn't even know the true definition of bar-b-q till I started reading here. I thought anything done outside on a grill was bar-b-q. I now see that is not true.

Well, I'm a-gonna take the plunge. Learn to do it right. At least I already have a smoker, even though I only used it for grilling steaks and hamburgers in the past.

I'm near Memphis, and love that style, preferring dry rub. My favorite Memphis bar-b-q is 1) Corky's 2) Rendovouz 3) Gridleys. Oh, and so many others here in N. MS.

I still think of Memphis as the bar-b-q capital of the world, but KC and TX are sure up there, too. So are places like Dreamland in Alabama. And then you get on to more and more, and they are all good. I'm just commenting on what I know, from my area. That's the fun thing about it. Bar-b-q is bar-b-q, but there are so many differences in all of it. Subtle differences. Memphis (even different parts of town), KC, TX, the Carolinas, GA, AL...the west coast, even Canada and Australia are all different in their own ways. Lots to learn. Gonna be fun!

Let me see if I have the basics...

Learn your smoker.
Get the heat right.
Get the smoke right.
Get the sauce/rub right.
Get the meat right.
And then you have it.
Simple, eh? Wink

Be patient. I have a lot to ask!

Howdy don. Come on in. You sound like a Q head in the making. I would suggest you do alot of reading here. These guys have covered Q'in from A-Z.
