well yesterday runnin behind got in a hurry.smoker was due for a cleaning went ahead and loaded some hickory fired the gas up started smokin some babybacks.went inside to get stuff ready my daughter says dad the smoker is really smokie ya,ya after 5 min. i go out to look .holy s--t its roaring!!! now this is a very old southern pride lots of air leakage so i open the small acess door little bit to get an idea and the hair on my arm is gone. Shocked close it start hosing down the outside to keep it cool t-gauge is reading 475 after about 10 min she burns out everything seems okay but what a way to start the day ribs were shot but taters were done very quickly Laughing so lesson learned was keep the pit clean and dont open the door big dummy Embarassed to see how big the fire is when t-gauge is reading 475. oh well happy smokin everyone im off to do some cleaning.

And it always happens at the worst possible time too? it couldn't happen when there is no food in it, it seems they got to wait until you have a load of food in, always!

wow sorry to hear that . what was burning? grease in the bottom? was the drain clogged? im sure that would get your heart pounding .

Having experienced my first grease fire this past weekend, I can sympathize! Not nearly as bad as yours... we only lost a couple racks of ribs, but sure glad that yours wasn't worse!

To bad that your food will now miss the flavor of all that old midew, greasey, nasty, smokey, chared up flavor that was in your pit. Good luck with the new taste to your customers.
