Hello everyone

Last weekend i did 35 pounds of deer summer sausage with chedder cheese i used the sausagemakers pre mixed seasoning and some hi temp chedder cheese i mixed 24 pounds of deer meat with 11 pounds of pork butt mixed it all in my 44 pound cabelas mixer that thing is awesome and smoked using hickory here is a pic each roll weighed 4 pounds

Looks great. I too have a Cabelas mixer and am looking foward to using for the first time.

i started the smoke at 120 for an hour then i added a pan full of chips and let go at 120 for another hour them bumped temp up to 140 for an hour then up to 160 for an hour then up to 175 to finish the sausage when sausage temp was 152 i pulled it and put it into a cold water bath it took a total of 12 hours in smoker from start to finish

How do you get your casings so tight and taunt? And do you use a hog ring pliers or do you hand tie with some butcher string?

I just stuff as tight as i can get them and twist them off and clamp on a hog ring as soon as i take them out of the smoker i put them into a cold water bath

those are some nice looking summers you got there!

I have been wanting to buy a new grinder and stuffer , and those beautiful summers are what finally lit a fire under my butt to upgrade my equipment to something from this century.

Northern tool has got their entry level grinder on sale for $99.00 right now, and I plan on getting their 15# vertical stuffer with it. Does anyone know if the drive gears on the 15# capacity model are the same plastic gears that the 5# model has? I want steel gears.

the 15# has the steel gears. I have that one and it works great. I also have there 99.00 grinder and so far it hasnt given me any problems

I got the 15# vertical stuffer from NT and it's the bomb. Man baby stuffs 15#s in like 5 minutes.
I gotta check out that $99 dollar grinder ........ may be time to get away from that kitchen aid.
