All of you guys that are near or are in a city that has a large university such as UT, UK, UGA, FLA or some other land grant school that has a pretty good animal science program with a meats laboratory, listen up. Get in contact with the meats lab manager. If you call the animal science dept they can give you the number. Generally the meats lab has a retail program set up to sell meats to the general public. I worked at the UK meats lab while I attended college there and we sold a lot of meat. We did quite a bit of custom slaughter with beef but we did a lot of pigs and lambs from the university farm. Now these were not on some radioactive feed trials! They were raised on the university farms for teaching purposes, etc. for the live animal and carcass evaluation, judging contests for 4-H and FFA and other college classes.
My ex-boss and I are still good friends and he calls me when he gets some of these in. They are having judging contests for the next few weeks and he is slaughtering several hundred market size pigs every week.
Now for the best part. I'm getting very nice 6-8 lb butts for about $.75/lb. These babies are fresh. I'm cooking some this week that were just slaughtered last Wednesday.
