| does anyone have a recipe for sweet cornbread? I love it, but I can't find a recipe for any. The best I've ever had was at Burbanks BBQ in Cincinnati, OH |

You'll be hard pressed to find a recipe for sweet SOUTHERN cornbread. We tend to like our cornbread salty instead of sweet around here.

Just so happens that I'm looking for a good authentic southern cornbread recipe myself.
One thing I know is, it's not sweet and it aint made with yellow cornmeal.

I bought Bernard Clayton's Complete Book of Breads at a library book sale last year. It has 18 recipes in the corn bread section.
As posted, Southern Corn Bread has no sugar and uses white cornmeal. They are drier than northern cornbreads.
I make the cornbread recipe from a barbeque restaurant in Hatford, Connecticut ... Black-eyed Sally's (http://www.blackeyedsallys.com). It's a moist, sweet corn bread, containing sugar and blended oil (canola oil with a little olive oil added). It also is made with yellow cornmeal. It's excellent served like they do, with honey butter on the side.
I can post Clayton's Southern Corn Bread, if you want. But, it won't be sweet. |

Cornbread
Just add a few teaspoons of sugar to make it sweet.
1 cup yellow corn meal
1 cup flour
3 tsp baking powder
1 tsp baking soda
1 tsp salt
1 egg
1/4 cup oil or bacon grease
buttermilk
Mix the dry ingredients.
Beat one egg and 1/4 cup of oil (add some bacon grease if you have it).
Add to dry mixture and mix until incorporated.
Add buttermilk until you have a nice consistency (ie. it'll pour).
Preheat your oven to 350, coat you cast iron pan with oil/bacon grease (I have both a cornbread stick pan and an 8" skillet I normally use) and let it heat up with the oven.
Pour the batter into the greased skillet (it should sizzle). Bake for about 20 minutes.
Note: If using self-rising flour and cornmeal, omit baking powder, baking soda and salt. |

my granny always made great cornbread, she used the castiron corn shaped cornbread pans, put enough bacon grease in there to drown a horse, and no sweatness, dry and perfect, put a piece in a bowl of beans and bam, sucked up all the juice for a magic bite of goodness.
if ya want sweet cornbread, buy a box of jiffy, add some cream corn to it, and there ya go  _________________ bullpin double barrel smoker

Oh lord, I don't eat stuff out of a box (if I can help it).
Your ganny's cornbread sounds like a real winner with all that bacon grease.
