I have been lurking in the shadows for about a year and have enjoyed reading the postings. Looking forward to participating.
I grew up around cattle and outdoor cowboy cooking (I own every piece of cast iron known to man and then some). Then became a cook in the Marines. My Father in law gave me a smoker when I got married 35 years ago. It was a brand new 55 ga. drum, but worked well for me at the time. It's still active as one of the pits at the deer lease. Some how I became the head cook at the deer lease. My current pit has been around for about 25 years and has been a constant work in progress. Man I wish I could weld. She has an appointment at the welders on this Friday morning.
I do a few competition cooks, special cooks for customers, friends and any reason to stay up all night q'ing. My wife calls it my slumber party with the guys.
We will be cooking for a customer St.Patty's day, which is a Friday night. Should be fun, green beer, band and lots to look at. They are expecting 300-400 people.
Any one cooking at Dripping Springs Founders Day Cook Off? We'll be there on April 7& 8. Expecting 120 cookers. This is a lot of fun, they ususally have about 25,000 people show up for the festivities. This not an IBCA cook, which is too bad.

Hahaha, I see. Well let us know if you're going to be in any competitons and I'll try to drop by and visit the Ptomaine Ptavern & Drinking Palace. You mentioned customers, what kind of work do you do? |

Were working on our schedule for the rest of the spring. Hope to have it done shortly, so we can see what comps we will be doing.
