| Hello, what is the current pricing for ribs at festivals. I use St Louis style ribs 2.5 down and I trim them to 12 bones. Thanks for your input. |

$6.00 for 4 ribs including sauce and served in a cardboard boat |

Last one here where I saw ribs vended, they were $7.00 for 3 or $12.00 for a sample plate, 2 ribs, pulled pork, chicken thigh, beans and slaw... the beans weren't bad, the rest of it was crap!  _________________ Here's a change Robert.

Are you trying to figure out of you can be competitive if someone else is selling ribs at the same event? Or trying to see if you can make a profit by doing this?
What is your normal pricing strategy? _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |

Thanks for the replies,
Here is some more information on cost, I cut my St Louis ribs myself from light spare ribs, I have found that when I do this I get a better product that is more consistent and has more meat on the bones. I pay 1.33 lbs for the full rack after cutting I have figured the price at 1.80 lbs. The tips that are left I sale as all you can eat on Wednesdays at my restaurant, this offsets the cost of the St Louis cut to under a dollar. None of the above costs consider time and labor. For this upcoming festival I am considering 4 ribs in a boat covered with sauce and two 1/4 pieces of corn on the cob. Today I sat down and figured cost at $2.00 a bone including the corn. |
