Hey guys,

Looking for an authentic carolina vinegar based sauce for some pulled pork. I have a solid original BBQ sauce recipe I have worked on, but I want to start developing a carolina sauce. If any of you can share a base recipe, the "standards" of this specific sauce, I would greatly appreciate it! I could just google it, but would like to hear from you guys! Very Happy

I would suggest you look through this section of the forum.. I know there are many vinegar sauce recipes posted here already..

When you say Carolina, do you mean pale with no ketchup or more red with ketchup? Commonly referred to as eastern style and western style respectively.

There are piles of both around. Smokin Okie's recipe is a good one to start with as an Eastern style sauce. Here's the link. He's got some good info there on quite a few other things as well.

Yeah I am looking for one with no ketchup, just a straight vinegar sauce to put on the pork after it is pulled. I am searching around but just wanted to see if you guys had any favorites Very Happy

I came up with one when I had my Q joint. The amounts are approximate.

1 qt. cider vinegar
1 cup Texas Pete's hot sauce (or your favorite)
1 Tbs. dark brown sugar
1/2 cup red pepper flakes
1 tsp. kosher salt
3 Tbs. black pepper
1 Tbs. chili powder
1 tsp. onion powder
1 tsp. granulated garlic
1 tsp. cayenne pepper

Mix everything together (the onion powder will dissolve once hot) in a sauce pan.
Bring to a boil, then simmer for at least 1/2 hour to release the flavors in the peppers.

I like this one:
1/2 cup cider vinegar
1/2 cup apple cider
1/2 cup dark karo
1/2 cup brown sugar
1/4 cup white sugar
4 tbs Franks red hot sauce
1 tb onion powder
Heat until everything is disolved. Dont boil. Let cool. Spoon over the Q. Have tried bunches of sauces. This one is my favorite. So easy too. Bob

here is the one we use it is a lexington style (western )
1 1/2 cup cider vinegar
1/2 cup ketchup
1 teaspoon salt
1/2 teaspoon red pepper
1/8 teaspoon red pepper flakes
1 table spoon sugar
1/2 cup apple juice
combine all ingredients in pan and bring to boil then simmer and stir until sugar is dissolved serve over meat
Works good for me

I'm a little late to this party...but what the heck...I'm in!

Here's the most basic of vinegar sauces.

1 gallon of Apple Cider vinegar
1.5-2 cups of crushed red pepper
1/2 cup white sugar
1/2 cup salt

You can do anything you please...but I never knew anyone to put stuff like karo, molasses, spices other than pepper, apple juice. Not to pick on anyone...like I said, you can do anything you please with a bbq sauce.

1 quart of apple cider vinegar.
show the vinegar a picture of some salt and sugar and other seasonings.
then add a spoon full of crushed red pepper.

J/K on second line above but the most basic recipes call for very small quantities of everything except vinegar

The one you just quoted,
Roxy's Mustard Sauce,
and my own tomato based sweet & spicy sauce.
