| Finally someone out there is preaching what texans have known for years.I too love mesquite and am from south texas.Edinburg to be exact but I live in colorado now. I have noticed for some reason that the judges in the kcbs no matter how light the flavor is dont like mesquite.Maybe I am wrong and hopefully somebody else who has competed and won with mesquite will chime in. |

Live in DFW, TX area but am from S. Texas originally. There's some good eatin' in San Antonio and I'm sure there are plenty of backyard legends that turn out some terrific que as well.

I was also going to add that I used to use an upright with the meat directly over the flame, and if you know what your doing and can control the fire it can be awesome.
I recently built myself an offset to allow me to cook more food for my growing family.
But you wont hear me knocking the direct style at all. |

it's probably the candied ribs have affected their taste buds...
The key to mesquite use is the key to any BBQ - it takes a lot of practice to do it well. If you use mesquite like any other Q wood, you might well have bad results. _________________ Visit my cooking blog. |

Thank s for the info.I have talked to some of the judges and they say they just don't like the mesquite taste.. I have mixed it with other woods with good results so we will se what happens this comp year. Cheers.  |
