Will co-packers take your sauce and put it into packets like Famous Daves and other chains have? I want to do this for my to-go orders as well as catering.

Sure you can find SOMEONE to do this for you.....for a price. When places like Famous Dave's and other chains do this they no doubt order MILLIONS at a time to get the price down to a price they can operate under.

For a small town caterer.....not so much Crying or Very sad Crying or Very sad Sad

What's wrong with using small disposable plastic ramekins like the ones used for salad dressing?

I have been talking to Bobbees Bottling out of NC and he told me I could get everything from packets all the way up to 50 gallon drums of my sauce. Of course I am sure there is a premium when they have to do ind packets. So far they have been very nice to work with in the early stages of getting my sauces bottled.

Labeling is the big issue.
