Anybody have a Linguica recipe? How about a premixed spices packet? _________________ I drink SHINER BOCK while I BBQ, Use apple and oak Wood. |

not my recipe, its a friends recipe
5 lbs. ground pork butt (50% fat)
1 tablespoon paprika
3 teaspoons salt
1/4 teaspoon cinnamon
6 cloves garlic minced
1/2 teaspoon allspice
1 teaspoon crushed red pepper
1/4 cup cider vinegar
1 tablespoon coriander
1/2 cup cold water
Cut pork into cubes, separating fat. Add pork belly fat to get a 50-50 mix.
Grind using a large plate Combine ground meat and remaining ingredients, and mix well with your hands. Cover and chill overnight.
Stuff into medium casings.
Smoke at 225°F for about 2 hours. |

Thanks, I'll give it a try. I don't make any sausage in less than 20 pound batches. Usually start off with 100 pounds pork butt and make several types of sausage. It still seems to go fast anyway.
I would assume that I should add pink salt if I'm going to smoke it. I always do that. _________________ I drink SHINER BOCK while I BBQ, Use apple and oak Wood. |
