Jerk pit master.... you right. I just re read what I wrote. I beleive I left out some stuff. I am a fee plus my cost of the food kind of provider, but I back check it to see what the overal food cost % would be from my old life in the resturant and compare that to the price per head which is what most clients want to see.
Do you specialize in Jamaican Jerk style of Q? I loved the time I spent in Jamaica. It was truely an eye opening experience. The curried goat was a different dish and I liked the Jerk pork and chicken out of the resort areas.
