Got back from the wedding in Dubuque by noon on Sunday Very Happy so I decided to whip up something on the smoker.
I stuffed two peppers with a meatloaf mix(1/2 # gb,rice,tomato,sauteed garlic and onion, Worcestershire,pepper, and one egg) and four smaller ones with a chicken stuffing.
For the chicken stuffing I took two bnlss skinless chix breasts, marinated in italian dressing, soy, garlic salt, pepper and lemon juice. I then smoked the chicken for maybe 30 minutes or so @250 until was done. I sliced the chicken, mixed with thick sliced sauteed onions and garlic, lots of cheese, salsa and some black beans. I filled two peppers that were smoked for 30 minutes, and two raw peppers. I also put a pat of butter on each of the chicken peppers.




They all turned out awesome, the beef could have came off a little earlier, the pepper would have been a little more firm. But the chicken peppers were amazing Very Happy Very Happy Tasted like a chicken fajita like I was going for, but had this amazing smokey flavor. I actually preferred the peppers that were not precooked, had a better flavor and a little crunch.
I will definitely do this one again!!!!! all the guests requested it again also!

I love stuffed peppers, and those look great! Cool

Kudos to you for pre-cooking the chicken.

Those look good! I like stuffed peppers but have never thought about doing them myself. I added this to my "cook list" for the Summer.

mmmmmmmmm! is that what I smelled Sunday just as I was heading out of Dubuque to go back home. Looks as yummy as it smelled.

Nice stuffed peppers luckyduk,so many endless things to stuff them with,chicken,pork,seafood,rice...the list goes on.
