I saw this post awhile back for Bubba Q's smoked chicken lasagna,so I said lets give it a go. Very Happy I went out and got 2 packs of boneless,skinless chicken thighs and brushed then up with evoo,kosher salt,black pepper and fresh oregano from my buddies farm in Italy.I smoked them for two hours with cherry and maple smoke,cooled and chopped.








Got all my ingredients together and started to build,I sautéed fresh mushrooms,I mixed together the tomato sauce with the mushroom Alfredo and made a blush,exactly what Bubba Q did.





Now we are ready for assembly,I did mine a little different then Bubba Q but its all good.





And here is the final product


I cooked this bad boy for 1 hour tented in foil at 325 degrees and then half hour no foil for the cheese to catch a little smoke. I must say this was an awesome smoked chicken lasagna.....thanks very much to Bubba Q for posting this recipe,it was great,I'm actually going to get three meals for two out of this,I had enough ingredients to make a mini as well. Very Happy





Washed it all down with some dry red wine.......it was awesome Very Happy Try It.

Looks great CB.. Got to love the pasta.

FYI it is called a Rose or Rosa sauce when you mix a tomato sauce and Alfredo.

Bet that tasted dang fine indeed.

That looks pretty darn tasty, I did get a chuckle when my wife said " are you sure he did that on the grill? I don't see any bacon,every thing else you show me is layered or wrapped in bacon "

Thanks guys and gals,It was a great tasting lasagna,the smoked chicken taste cooked through the whole lasagna,but I did have it on the cooker uncovered for about a half hour to let the cheese pick up a little smoke.Looks like Im going to have to get a lasagna pan with 8 corners. Laughing

I did not know there was a name for it Roxy,but thanks for filling me in,I guess thats why they call it a Rose when they make a light red wine.

You should have seen the look on my face when the guy handed me a big baggie of that oregano at work,in front of everyone,I thought to myself ,is this guy nutz.It was so fresh I could smell that oregano a mile away. Very Happy Very Happy

Since I'm on a "mainly bird" diet when it comes to meat I'm gonna have to try that out.

That looks like something I could make for me and the wife to have all week long!
