Just ordered my WSM the day before yesterday. I'm pretty excited. I've been on an off-set bar-b-chef for the past couple of years, but I thought I'd add to the collection.

Fill it with water & charcoal, put a handful of lit ones in the middle, a few chunks for smoke around. Get it to temp & walkaway & come back in about 12 hours.
So much easier than the offset, but no fun poking the fire & messing with the meat  |
