|
|
Does anyone have an idea for a good BBQ Sauce that would be really good on chicken?? (1 that my kids would like too so not too spicy)
One that would use ingredients that we would probably have.... (we have all of the "common" bbq sauce ingredients thanks to my bbq fanatic hubby) haha
I want to have our BBQ chicken tonight but just need a new fresh BBQ sauce!!!
Ideas?!?!?! |

| That would be a good idea, except we don't have the bottled sauces. My husband usually makes the BBQ sauces. I don't even remember the last time we used a bottled sauce.... |

What flavors are you looking for?
Have you tried a mustard or white sauce on chicken.
I like these ones:
1/2 C Country Dijon Mustard
1/4 C Brown Sugar or Honey
3 TBSP Cider Vinegar
Or
1 cup mayonaise
1 cup cider vinegar
1 tablespoon lemon juice
1 1/2 tablespoons black pepper
1/2 teaspoon salt
1/4 teaspoon cayenne
Roadside Chicken isn't bad either. |

I have a recipe that I like, but don't have it in front of me. Off the top of my head...here's something close:
2 c. Apple Cider Vinegar
1 c. Water
3 c. Ketchup
2 tsp. Salt
2 tsp. Sugar
1 tsp. Crushed Red Pepper
1 tsp. Granulated Garlic
1 tsp. Dry Rub
1 tsp. Hot Sauce
1/2 tsp. Black Pepper
1/2 tsp. Cayenne Pepper
Now, this will not be a super thick sauce. The 1:1 ratio of liquid to ketchup will yield you a thin, but slightly viscous consistency. It should not be extremely spicy (I compensated for that already).
I like to season my chicken (I don't use rub on my chicken...don't like it) and smoke as usual (low & slow for me...some people don't like that method). When the chicken is almost done I sauce both sides and continue cooking in the pit for about 30 more minutes. The additional time does two things for me. 1) It dries up the sauce by evaporating most of the liquid. This gives me a bird that isn't "wet" and also intensifies the flavor of the sauce. 2) I feel the sauce "grabs" the smoke in the pit and gives a bit of extra smokey "boost" to the finished product.
This is my method...your mileage may vary. _________________ Somewhere in Kenya...a village is missing their idiot. |

| Alabama white sauce is great on chicken, my fave at the moment. Also look at BBQ U for chicken tarragon sauce. Used to like Cattleman gold and John boy and billy. |

2 cup ketchup
2 cup cider vinegar
2 cup dark brown sugar
1 cup dark corn syrup
1/2 cup molasses
2 tsp honey
1 tsp sea salt
1 tsp fresh ground black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp Tabasco
Mix all ingredients well in a nonreactive pan, make sure the sugar dissolves, bring slowly to a boil in sauce pan, simmer 5 minutes, take off the heat, let cool. _________________ Here's a change Robert.
