I finally decided on the Backwoods Smoker. So far I've done a load of 7 racks of ribs and then I did a split chicken by itself (I needed chicken practice Smile )





Both the chicken and the ribs were the best I had ever done!



The cooker is designed to work on the minion method. You fill the charcoal pan to the rim and then start a 6"x6" fire in the corner. The manufacturer recommends using lighter fluid, but i cheat a little more and use a small amount of Kingsford Matchlight. You let the flame burn off, and then pop the pan in.



The cooker, so far, keeps a temp of 225~250 degrees like a pro!



For a five hour smoke on the seven racks of ribs, my smoking wood use was at a minimum. This thing's really efficient on the wood! Very Happy





The cooker looks like a direct heat set-up, but it's not! First, It's got double walls with insulation. You can't feel any heat on the outside of the cooker, which will be really cool for the logo I plan to paint on it one day. Then, there's a third wall on the inside. the waterpan at the bottom of the cooking chamber forms a barrier which routes the smoke and convection heat up and around the cooking chamber, on the outside of the third wall. then the heat and smoke enter the cooking chamber at the top and are pulled downward by the draw, which is at the bottom of the cooking chamber. On top of this, the waterpan is providing steam heat.

Inside the cooking chamber, you have six grates, each with a cooking surface of 15"x16" and 4" clearance between each. Each grate is removable if you need more clearance.

The steam/convection combo made for a perfect chicken with crispy skin, and some awsome ribs! Almost all the fat in the ribs had drained off into the waterpan, so the ribs were really lean, but expertly tender at the same time, not dry at all.

I'll post some pics of the inside as soon as I actually take some!

Nice pictures Tom and I am glad that you are enjoying your new Backwoods Party cooker. They sure do a great job with many different cooks and are my favorite cooker. Please keep the pictures coming as I am anxious to see more of your cooking.

New smoker looks awesome. Did you keep the old one? Also, when is the orange "T" going on there?

I still got "Old Rusty" in reserve, for sure!

Which model of the Backwoods is that? I'm contemplating getting a Backwoods smoker myself.

This is the Party model. It looks smallish on the outside, but it's got a lot of cooking space on the inside.

For my personal endeavors, this has produced the best BBQ i've done so far. AND, it's the most fuel efficient several times over!

Ahhh, fuel efficiency.....now that's what I'm talkin' about. It's such a hard choice to make. I want to get something "middle of the road", not to small, but not to huge.....at least not yet. I'm kinda leaning towards the "Fatboy". Ummm, still not quite sure.
