Thank you all for all of the kind comments on my new cooker that I posted a couple of weeks ago. Now to prove that I can cook! Today I finally got a chance to cook on it for the first time. I got a lot of foot traffic from folks in the neighborhood too. It was fantastic. It took about an hour to get up to temp and steady. Once it settled in around 230 degrees it is was pretty rock-solid. Adding a stick of hickory every 45 minutes or so to a fire about the size of a shoe box but no messing around or adjusting. Thin blue smoke the whole way. No severe temp spikes or dips. Highest about 256 and lowest about 217 and I was able to get stuff done around the house without watching like a hawk...a welcome change from the Chargriller. Here are some pics ... a couple of briskets and some StL Spares. (Trimmed full spares to StL myself for the first time ... what a money saver.) Thanks for looking and for all of the knowledge that I have gained here over the last year!

Great lookign work there... love that brisket, looks about perfect. Love the color on those ribs... I need my rib fix soon, been watching my intake for a couple months now,, time to eat.

handz98, everything looks awesome thats a fine way to break her in, Your ribs look mighty tasty as well as that brisket, both have great color and a beautiful bark on that brisket. Nicely done  |
