I am sure that this is an easy one for you Southern Folks. Being in MN I have never really seen places serve sweet tea, but anyone with Southern Roots that stops in says that I need to serve it. Anything for the customers, what I need to know is how you make your tea. I have gotten about 5 different versions from customers. If you don't mind letting us know it would sure help us out. |

OR...Google *how to make sweet tea* and you will come up with many.
DO NOT make "sun tea" for customer consumption...not allowed by most Health Depts |

One minor "trick" is to put 2 cups of water in the microwave and heat till it's very hot. (or any hot water) Then put the sugar in that and stir. Then pour into the tea. The sugar will dissolve much easier in the hot water.

We use 2 cups of sugar per gallon of tea. While the tea is hot pour over sugar and stir, and then add cold water, and stir once agian. _________________ Michael

There's sweet tea and then there's SWEET tea. Herman gives the ratio that should yield SWEET tea.
In NC we use a vinegar bbq sauce. The sweet tea (and sweet slaw for that matter) really help to balance the flavors. It's good stuff. _________________ Somewhere in Kenya...a village is missing their idiot. |

I get the one gallon bags from Sam's. I boil about a qt of water and add the tea bag and 1 cup of sugar let it set for about 15 min add to 3 qts or water. Adjust the sweetness to your customers tastes. _________________ Bluegrass BBQ

We have a commercial Conti unit that makes 3 gallons at a time. While its brewing and gets about halfway we pour in 3 cups of sugar. After its finished we pour in the other 3 cups and whisk until dissolved. Sells great. I have people stop in and buy gallons at a time. Get the jugs from John Conti or GFS. Don't use the sweetener offered by the company you get your tea from. It is a mixture of natural and artificial sweeteners to cut costs. It makes nasty sweet tea! _________________ Sam Diggity's BBQ

Yeah anything except pure cane sugar just doesn't cut it.Thats why bottled teas taste bad there sweetened with corn syurp. Coke makes a product called coke black sells great in europe, floundered here. Sweetened with sugar there and cheaper corn sweetener here _________________ www.ridgeviewbbq.com

EXACTLY! If the tea is done correctly you'll get fuller off the tea than the food around here! |

The easiest and traditional way is to first make a "Simple Syrup" (any culinary site has the correct sugar to water ratio's for a simple syrup)
Simple syrup contains more sugar in the water than is able to dissolve at room temp or cold temps. It requires boiling the water so the amount of sugar needed can dissolve.
If you have stock pots large enough, you can make enough for a week at a time.
If you have a coke or pepsi dispenser, you can get their tea concentrate and make sweet tea right from the gun by adding a pre-mix tank to the system that is full of your simple syrup then the soda gun will use B-I-B tea concentrate (Bag in box) and meter it into each serving.
Yu will still have a traditional sweet tea but in a modern sanitary dispensing system. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |
