Smoked another brisket today... This time, after making the mods suggested in the forum for my cheapie brinkmann square smoker, it went much smoother. It was a smaller brisket... Next one I'll try a larger one. This one went 9 hours. I got a real nice smoke ring, which you can see in the pic. The flavor was awesome and it was tender and juicy. Thanks for all the tips guys! I think I'm hooked on smoking!
One question... when reloading my smoker I alternated using hardwood chunk charcoal and charcoal briquettes. Both I used a charcoal chimney and both I used 3/4 of a chimney. The coals were blazing hot when I put them in there. Glowing orange with flames. In both cases where I used the hardwood chunk, they were about 30 degrees cooler than when I used the same size load of briquettes. Is this normal?

Charcoal burns hotter than seasoned wood, So that might explain your heat differences.
I am sure the science behind it can be verified and explained through a google search. _________________ Just remember that the toes you may step on during your climb to the top will also be attached to the a$$es you'll be forced to kiss on your way back down! |
