Just put the spareribs on with Head Country Seasoning and enjoying a 70 degree day. Life is good!

I can't wait for some of that warm weather to make its way up here to New York. Although it is suposed going to get up to high 40's. So thats like t-shirt weather as of late. Nice lookin ribs and cooker.

Thanks All. The ribs are at hour 4.5. I foiled them at the four hour mark (4-1-1) and added some apple juice. At the five hour mark will remove the foil and add Roxy's glaze every 15 mins for the last hour. Will post pics when I glaze for the first time. Will also do an internal temp check.

It is a beautiful day. The kiddos have been playing in the woods and in the small creek building a fort. I have been minding the smoker, fixing ABTS, and dessert. Will post pics when it all comes together. I hope you alls day is going well.

Thanks Guys. The ribs tasted great. I liked the Head Country seasoning and Roxy's glaze. The family loved it too.

This time I used the 4-1-1 method but the ribs were done after 4-1. I purposesly did not do the 3-2-1 as the 2 hour foiling made the ribs fall off the bone tender. So, this time I foiled for an hour and the ribs were still falling off the bone. Next time I am either going to foil for 15-30 mins or not at all. I want ribs that you have to eat off the bone not falling off when you pick it up. All in all it was a great day.

jeepdad I made the same foil mistake (foiled too long) at my first comp. last week and the scores reflected it.

jeepdad, your Ribs look awesome Very Happy You cooked those up just like Mrs.K.A.M. loves them, I am glad you liked the HC and I am guessing the salt content was not to much. I have to say my man your desserts are truly a work of art. Nicely done on the ribs, plate up and the dessert. Smile

Oh your killing me. I wasted that weather when it came through yesterday puttering around . Now it's raining and these pics are making me wish I would have got something going while I had the chance. Great looking food.

You better go make sure those kids aren't building a dam down on the creek. Ahhhh to be young again..... Laughing
