Just finished making up a 12 pound batch of Garlic Basil sausage,fried up a pattie, taste great,maybe tomorrow I will charcoal grill some up for dinner,One thing I can,t remember when i made sausage with my dad was,do you guys prick fresh sausage ?I can't remeber if he did it for fresh sausage or if he did for dry cured salami's or both.
Twelve pounds pork shoulder,nice and cold
Ground and seasoned
Into the spare freezer to get real cold.
My spare hands(mom)
Away we go.
