Tomatoes
Onions
Jalapenoes to taste
other vegetable to taste
a bit of white vinegar
salt and pepper to taste.

Just go wild and see what works for you. I can't remember ever having 2 salsa's that tasted the same.

The best flavours are fresh from the garden.

I would toss in some lemon or lime juice and some garlic...maybe a splash of jose if I was feeling crazy...

i use tomatoes (plum or roma tomatoes are best, few seeds and the flesh doesnt turn mushy and release a lot of juice)
jalapenos
white onion
garlic (lots of it)
cilantro (its so good in a freshly made salsa)
lemon juice

and thats pretty much it

i find i never use enough jalepenos so my salsa doesnt have much if any heat to it. need more jalapenos!

you can exchange the tomatoes for mango and have a mango salsa (great for spicy chicken off the grill!)
you can throw in any pepper you want if the jalepeno isnt hot enough for you. you can use red onions instead of white throw in some green onions too for a different flavor. why not shallots as well? they have oniony garlic like taste to them.

heck try some roasted jalepenos and roast everything else and make a roasted salsa.

it all depends on what you want and how far your imagination can go.

First post here and figured I'd share mine.

5 (on vine tomatoes)
1 large white onion
2 bunches cilantro
2 serrano peppers (whole)
1 Jalapeno pepper (seeded)
Fresh garlic to taste
Garlic salt to taste
Juice of 1 lemon
Juice of 1 lime
2 tsp or so white vinegar
Fresh ground black pepper

Peel skin off tomatoes and place in blender with onion and chop. Place serrano peppers in a pan with a little oil and cook until skin changes color (they will start to pop as the oils in the peppers come out). Place in blender with remaining ingredients and puree.

Check out the bible - Smoke & Spice by Cheryl & Bill Jamison. They have a terrific recipe for smoked tomato salsa.

This is a salsa recipe that i like. It is fairly quick and simple. If you want more heat you can add more peppers or substitute a couple of habaneros.



2 medium size ripe tomatoes
1/4 medium size onion
4 sprigs cilantro
1 clove of garlic
1/2 freshly squeezed lime
at least one jalapeno
add some season salt to taste

chop all ingredients to the constitency that you desire
