I worked at a pit a few years ago and we did a all you can eat beef ribs special on Saturday night.. It was very popular indeed. I dont know about a week night though. A place a worked at when I was young did a tuesday 2 for 1 deal that really helped to fill the dining room.

I think the key to it working for you would be some sort of promotion and not relying on just your walk-ins as they are there already to order food. The goal would be to attract new customers that might just be driving by.

Pulled pork might be the best bet as it butt is the cheapest cost to you.

If I would have ever seen the issues that Q-Lady had, The health inspector would have gotten a call to show him the product and invoice of the suspect delivery. If they delivered past date items it is in violation of HD rules, and against their mandatory HACCP plan. I can honestly say I have never got any questionable items from them, Although I see expired items displayed in the grocery stores on every visit without fail.

Nationwide, Sysco has even restricted their sales people from delivering any fresh meat product becuase it goes outside of their published HAACP plan.

AYCE is not a money making proposition in my area because of all the gluttons that follow these places. The price for AYCE meals is low because on the many places that offer such service. Never could get my food costs below 45% the years that I offered a Sunday AYCE. Never again will I offer a AYCE or even family style meals at my restaurant. I try to offer quality meals at affordable prices while keeping my food costs below 33 %. I'll leave the AYCE for others to offer.

I agree with Herman. Where we're from (I grew up 25 minutes from where he is located) buffets are extremely cheap.

Around Charleston and Savannah I've run across buffets that go for $12-$18...and that's for nothing but country food...fried chicken, meatloaf, and vegetables! At that price you could make money off a buffet.

I've learned that buffets are for large places that work off smaller margins and simply try to get as many people through the door as they can. Now, when you're charging $14 for a lunch buffet and have hundreds lined up to get in the door (like The Lady & Sons in Savannah) you can make a pretty decent living. By the way, the evening buffet there is $18 and the Sunday buffet is $16. Wish I could do that. Hey, the food ain't that special.

Back when my family had a bbq rest (parents retired now), we had a "Pig Out Plate". It started out as all you can eat. All pork products, sides, and bread. Ribs, sausage, pulled pork. We are in a college town. The football players would come in and eat, and eat, and eat, and eat, and eat, and eat, and eat, and eat, and eat, and eat. We lost out big time. We changed it to an "all you can eat/3 plate max" if that makes sense. So beware if you are in a college town!
