| I go both ways when I cook at home, if I foil I can do the butts in 9-10hrs, and if I don’t it will run 11-12hrs. When I do a competition I cook two of each, and most times use the foiled meat for the bulk of the turn-in and then mix bark from the un-foiled butts so I get the best of both worlds. |
