Hey everyone, I've been lurking around for a while and decided to get signed up. I have gained a lot of knowledge from you all over the past few weeks and hope to keep learning and make a few friends. I have a Brinkmann Deluxe Charcoal Smoker. I know its not a Weber but hey, I do have a Weber charcoal chimney. Really now, I made a few of the basic mods like a slide cover for the bottom vent and a raised charcoal grate, also some new brackets to lower my top grate a couple of inches so I can do three BCCs at a time. I added a new temp gauge to the lid and boy am I happy. I did a five hour "high temp. slow cook" on a 9lb butt yesterday and it really turned out great. The meat was so tender that, as you can see in the second pic, it just fell off the bone...

Chilepeppa, what were you thinking? You could have ridden to the nearest BBQ joint. I ride mine mostly to work and back but, the occasional tour de Saturday comes around every now and then. |
