This is My Confession
Right now I'm not going outside to BBQ...Im using a Indoor smoker like this one Embarassed

I'm smoking a fruit and cheese stuffed pork loin as we speak - the wife really likes the recipe we took from TVWBB and tweaked to suit our tastes.

My confession is that I've actually PAID CASH MONEY FOR MESQUITE WOOD Shocked Shocked Shocked on multiple occasions now, so I'm mostly 'over it' (tic-tic).

I pressure cooked ribs before throwing them on the grill. I attribute it to just being lazy. Sad

Thats not embarrassing Necron Thats just an addiction to Mesquite Laughing

Mine would be listening to others about how to cook a brisket and watching around 11lb.s of goodness dry up because I did not cook to temp. Live and learn. Laughing

john, years ago I bought one of those for my gas grill, I nearly went broke on propane trying to get that smoke flavor Laughing

I got 3 of them, soaked the chips in water.. loaded them up.. then did some steaks on low heat in a gasser grill. I ended up with creosoted steak of some sort.

A week after that I got the chargriller offset at Lowes. A year after that I got the Traeger.

Yeah, but until I moved out of Texas, I could never figure out why stores there had mesquite chips, chunks, and logs for sale, when there it was in just about every utilities easement, roadside, etc. and windstorm cleanups always yielded cooking wood. I figured the stuff in the stores were for tourists Shocked Laughing

It was in the wee hours of a Saturday morning - I'd been up all night doing some pork butts. It was that perfect time of day where there's some mist in the air, everything is deathly quiet, even the birds aren't yet awake, about 5:45 a.m. A gaseous anomaly announced it's presence and a need for evacuation (had been drinking beer since around 2:00 a.m.). Certain of my solitude, I did a one-cheek-sneak and set it free. Immediately, from the other side of the privacy fence, my neighbor John's voice said "Damn - never heard a smoker make that kind of noise before!"

25 + years ago...........My NEW wife wanted a grilled Steak........
I had no grill............
I found a piece of metal that would pass for a Grilling Surface.......
Found 4 Bricks............
Got the Grill semi level , and lit the kingsford.........( That's what Dad used ? )
About the time the Steaks , Were what I thought were done............
There was a Very LOUD explosion .........................


I used my wheel barrow , and the tire Blew Up ! ! !
Hench the name of the U.D.S. I am now making..........

I did unspeakable things to spare ribs on a gas grill.

I have a Cameron's stove-top smoker. It's made of thin stainless. Emeril's cast-iron smoker went to the top of the wish list. They both use the same sawdust...errrr....wood chips.

Know how that goes. Amazing how much propane my gas grill uses on low for many hours.

Tried a rib smoke on it one time. The grill has four burners. Turned the outer two on for three hours, then cranked up the two inner burners to finish it off. Came back 20 minutes later to baste and found a roaring grease fire started by all the fat rendered on the inner burners. Ruined my new rib rack and three racks of ribs -- surprised I got the fire out without ruining the grill...
