For those of you that do not know me, I am the WIFE of missionsusmc that is on the forums.
I know he will want to post about it.... but I beat him to it!!! hahaha

Tonight we had a delicious pork tenderloin. The pork tenderloin was butterflied open and stuffed with Ricotta Cheese and a Spinach Dip. Then it had one of my husband's rubs on it and wrapped in bacon.
I was LMAO at my hubby though. He had this thing stuffed and could not figure out how to get the bacon wrapped around it without everything falling out and then to get it to stay. He was getting majorly cranky and STRESSED. He even tried to get me to hold it up while he wrapped it. Nope that would be cheating!
He finally figured it out... somehow.
It was delicious though and our kids actually ate it.
It was served with a BBQ sauce that had apple butter in it. Not sure on the rest of the ingredients... Trey can fill everyone in on that!
I was very bored on the way I had been fixing pork tenderloins. 1-10, I give it a 8. And that is only because I ate at Ruth's Chris Steakhouse last night for Valentine's Day and had stuffed chicken breast, crab cake,sauteed tomato, fillet, crab stuffed mushrooms and Sin Chocolate Cake. Nothing could beat that at the moment!!! haha

Apple butter, tomato sauce, a few shakes of Wooster, and I added a little bit of the TL drippings/juice when I brought it out of the oven. Yes, oven. She wanted it done in the oven to make life easier for her, but I wound up and made the whole thing.

Butterflied it open. I'm an amateur butterflier. I cut through at a couple of spots. Banged it out with the bottom of my 10" SS pan. Thought that would force the holes closed. Sprinkled some rub on the inside of it. Mixed some WM spinach dip and some Ricotta together. Took one piece of string cheese and pulled it apart and put on top of the spinach/ricotta. Tried rolling it up. Yeah I guess I'm an amateur tenderloin stuffer too. (that didn't come out right) Well, maybe I had a little too much stuffing, cuz it came out everywhere, especially at the spots I cut thrugh the meat. So then I tried to wrap it in bacon. AFTER I figured out that I just had to get my hands messy to wrap it the best way I could, I wrapped it in bacon. Yes, I got stressed. Toothpick on each end to hold it together. Lined the pan with foil and then tented the foil over it. I'm guessing with the foil on top, it kinda steamed the meat, cuz it was real soft and tender. As I said before, I added some of the juice to the sauce. The sauce was really good. Very simple. I might make it a "real" sauce next time by adding some onion and garlic powder to it. Maybe some vinegar to make it a little more tart. It wasn't overly sweet, but the apple butter sweetened quite a bit.

Blue lakes on the side. It was very good. Next time I'll try it in the smoker. Apple smoke with apple butter BBQ sauce. MUAH!!! That would be good. If any of you try it out before I get a chance to, lemme know how it is.

Edit: After I wrapped the TL in bacon, I rubbed it down with the same rub I put on the inside.

BusyMommyinTN, sounds like a fine meal Very Happy I dont know what I would do with out Mrs.K.A.M. helping me out in the Bacon wrapping department oops did I just say that Laughing Glad to have you aboard hoping to see some pics of your cooks as well. Very Happy

In defense of myself, yup I was SUPPOSED to make this and yes the oven makes it easier. However, Trey WAS home and he could have said Nope I am going to make it in the smoker. We didn't have all of the ingredients though so really no time for that. I had to send him out to town. I have been busy as a bee today trying to get some organization into our life and our home before our oldest son begins kindergarten next Monday.

BusyMommyinTN, Welcome to the Ring, I hope I'll get to see some pics of your cooks. Today I kept telling k.a.m., "Take your own pics, it's your cook", and "you decide what and how it's done". But I caved in and helped out, with pics, the bacon and other stuff. But it's nice to be needed Wink
