Yukondude1,
Hi and Welcome!

I have successfully converted several old 'fridges to Barbeque Smokers,so for the purpose of answering your question about
whether or not fiberglass insulation used for applications other than which they were intended,only You would know for sure once You applied it.

That being said,I have used Hi-temp,Industrial Foil Faced Flame Retardent Woven Fiber-Glass batts exclusively,and have had predictablely desireable results...However,That is NOT what I am recommending to you to use for your purposes.

Go to any Appliance Parts Supplier or for that matter...Hit the Search Engines (I was just on 2 of 'em) They stock and/or sell stove/oven/range insulation by the piece or foot or roll...whatever 'ya like.
Now Ya' get what ya' want...And it'll work just Fine!

Tony,

Thanks for your suggestion, however, I have a large amount of commercial HVAC insulation on hand, and hoping someone may have used it for a smoker application. I think what I'll do is cut off a sample piece and try burning it both with a flame and a hot air gun and see what happens.

In my opinion,I think I would go with the heat gun test and monitor at what temp combustion occurs.
Consider that the insulation would not(should not)be exposed to direct flame; The temps you might be encountering in the smoke chamber should be considerably lower than the "flame spread"
factor of the insulating material. (ASTM E-84,Burn-Flame Spread Tests)
