the phone rings and we have to go to hospital pronto! MIL is ill. Sad

I take ribs out of the cooker, wrap in foil and throw in the frig.

Hours later, MIL is OK and back home resting and doing fine thank you!

Now what about the ribs? Do fire up the gasser and chips and finish cooking as if nothing happened? Was doing the 3-2-1 method @ 230F and was 2-1/2 hrs into the cook. Do I add time due to the ribs being cold from the frig?

Or... do I just finish cooking in the oven. Uhg... Confused

BTW...nothing like watching the Super Bowl on a 18" TV in a hospital ER waiting room.

Might not be the answer you were looking for, but if it were me, honestly, I'd just finish them in the oven. A) it's easier than firing the cooker back up, and B) if you are doing 3-2-1 anyway, they've already spent about as much time in the smoke as they were going to spend. If they're already in foil, just add a little flavorful liquid inside the foil, toss 'em into a 250* oven, and cook 'em til they're tender.

....but that's just me. Wink
