First of all this website rocks! I am one of those that have been using it and digging around for ideas. I thought I'd finally contribute. I've been smoking for a while, but am still learning.

First of all here is one of my smokers, a Brinkman Smoke 'n Pit, I love it.


It is 18 deg F right now and we have about 2 1/2 feet of snow on the ground in West Michigan, but that's not going to stop me. Here are 2 shoulders and 3 racks of spares. I used a mustard slather on the shoulders but not on the ribs.


And I've got a couple oak logs going real nice.

I haven't seen a smoke and pit with the steel rack. I have the wooden one. Thats a nice change! By the way, I got mine for 165 dollars 7 years ago. I think they are 300 plus now!

Great looking cook. Can any of you that live up north like me imagine having to stop cooking until spring because of cold or snow? I can't the cold is not a reason to stop or quit, it's just a minor inconvenience that we deal with every winter. Besides, the smell of pork fat on the smoke ona cold crisp winter day, the silence that the snow seems to bring as we sip our beverage of choice, makes the trail of smoke into the cold air almost surreal. I love it.

Sorry for the delay in posting the other pics, this thing called life/work keeps gettin in my way of having fun. This smoke was for work, and unfortunately I forgot my camera, so the pics are just before I pulled the meat off the pit.


BTW, that is snow falling! By the way Alien, your PP method worked great, it shaved about 2-3 hrs off the smoke time.


Does anyone else smoke their baked beans? They turn out awesome!
