necron 99, i like smoking with maple but i am not familiar with a bullet type smoker might be using a few more chunks might help you, could be the wood was dryed out to much, just an opinion but maple seems to burn up quick. Another thought on your leftover maple you have left, i love to smoke a raw shoulder w/maple an a few corn cobs . I use Mortons TQ with little x-tra brn sugar now that some good eats . Great job on your cook looks great

Thanks again everyone!

The local strawberries are just coming into season here and won't last too long, so I make the most of it while I can.

FrankC - make sure and post a cook thread for us. I'm thinking of going along the lines you went, but subbing toasted pine nuts for the walnuts, and trying some triple berry balsamic glaze from Super Target on my next pork loin.

It'll be a while though - we're going to try to eat more chicken this week for a change of pace.
