I thought I read a post where someone said smoke doesn't penatrate through a mahogany collegen casing. They said to use a synthetic fibrous casing for sausage making. I'm new at this, does this make any sence. Hope I wasn't dreaming this. |

I can't help ya with this, but I will be watching to see what others think. All of my sausage stuffing thus far has involved natural hog guts. _________________

The hot sticks that I make come with collegen casings and they do very well in the smoker. They are the clear ones though.This batch I am working on I am using natural hog casings. Not real sure how I like them just yet. I cant seem to be able to get them to be uniform in size. But this is my first attempt with them so I may just need so more pratice. _________________ free is better than cheap!! |
