First, where can I find it? Secondly can I use regular cheddar cheese when smoking summer sausge at about 150 degrees or will it break down? Any help here will be appreciated.

| You might also try calling some of the butchers in your area. Some of them around here that process deer and make sausage sell casings, spices, high temp. cheese, etc. |

| Call around to you local butchers shops if any . In a pinch i found a local grocery store that i remembered they had some homemade sausages in there display cooler ( i ran out of casing on a sunday) i called them and now i have a diifferent place to get casings and high temp cheese if need be. You might find a place where they process deer close that might be a great place for supplies. |
