Did you tried it ever in salt?? or in news paper??
i live a few meters away from a trout-farm so my chargriller sees very often trouts in all kinds of smoking and grilling!
NEWSPAPER:
Take the trout and pull out all the bowel (right word???).
Wash the trout under running water and take some lime juice, and seasalt to massage it into the trout. Fill it witth cutted onions and garlic and close the trout.
After that you take a NEWSPAPER and open it...
Take some lopppings rosmary and basil and put a lot of it (I MEAN A LOT!!!)with thyme on the paper so that you cant see the newspaper. Now roll the trout (lying on the herbes) into the NEWSpaper, till you just have a big NEWS-roll closed from all sites. Now lay this roll into your sink filled with 2 inches fresh clear water, and turn it after 10 minutes.
After a while you can smoke the wet fish-NEWS-roll in your smoker for even 2 hours at 250°F .
When the paper changes the color into "burned brown" you take it off and serve it with some of the herbes and a dish Olive Oil!
You won't believe how delicious it is!  _________________ ,...just delicious!

That sounds interesting Acki. Does the trout take on any smoke flavor?
On float trips we always take aluminum foil, lemon, butter, salt and pepper and cook them that way on a bed of coals. It doesn't get any smoke flavor but it sure is tasty! |

The longer you put the trout in the smoke, the more flavour it takes on. depends on the woodchips you use I think. i use spanish cherry or beech!
the method directly on the coal i also tried but i prefer it indirectly! _________________ ,...just delicious!

how many layers of newspaper do you use? i imagine it's got to be more than one page....5-10? |
