What are some of your secrets that you all use to win comps? Any tricks on chicken and brisket?

What do you do that makes your's better than the other guys'?

If you have specific questions I will be more than willing to answer them, but I think you will be hard pressed to find anyone that is successful willing to give up their edge over the other guys.

Now, if you came out and cooked with me I would show you everything I do, but I'm not going to put it out there for the whole world to see. But at the same time it isnt like I do anything special.

I rub my meat, cook it with smoke, might add a little sauce and then put it in the box.

I dont think it is poor sportsmanship to NOT tell someone your secrets. Comps cost a LOT of money and there is a LOT of money on the line.

Well I don't normally share this but......

Our own spice! We have 80 trophies and awards and 3 grand Championships with it. Good stuff.

And use the freshest chicken you can get. Butts get the same size when cooking multiple butts ( at least 2) same for briskets. Remember the best grade beef can be your friend. Get the best ribs you can

I actually posted some very useful information, no real secrets, but tips I have picked up here and on other forums that have allowed me to perform at a respectable level in a very tough to compete area.

But I deleted it after I saw how helpful you were to that fellow from Canada.

1) Buy the highest quality meat you can.

2) Cook it with love and attention to detail.

3) Make a clean, neat and beautiful presentation!

4) Help others as much as you can through out the whole competition.

Read the forum first. No kidding, there have been 100's of post and LOTS of secrets mentioned.

As for help, like they said, you have to be specific. The only way I could "tell" you how is to write a book, but I wouldn't give that away, although about 75% of what I do I've put in a forum post somewhere.

You just have to find it, kinda like a treasure hunt Laughing

That sounds a heck of a lot more entertaining than reading a bunch of secrets, that's too much like homework.

I found that consuming a high amount of barley soda helped ease my nerves at my first comp......

Haven't been competing that long and really haven't racked up any trophys yet but I listen to the ones that have and here are some of the main points that I have been told by some pretty successful teams.

1. Consistency, Consistency, Consistency!!
2. Don't try new ideas in comps
3. Good quality meats
4. Oh yea..........consistency!!

I don't have any secrets. It's BBQ, not Rocket Science!!!

I got a 1st Place Trophy in Brisket and it was the nastiest LOOKING Brisket I ever cut. Tender? Yes. Tasted good? Great.
But presentation was not good at all.
I stood back and looked at it and shook my head, picked up the spray bottle with 50/50 mixture of Apple Juice and Jack Daniels and sprayed the Hates out of it!!!!!!!!!
1st Place. Go figure.

Chicken? Got a 1st Place Trophy that day in Chicken, too.

Used Thighs. Smoked them until almost done, spraying often with the Jack/Apple mixture. Last 15 minutes put them NEAR the fire box and LIGHTLY coated them with Sweet Baby Rays Original Sauce, thinned with just a little Jack Daniels and added just a little Cayenne Pepper.
I don't even like to cook Chicken!!!! And do not very often.

My Baby Back Ribs SUCKED BIG TIME!!!!
My Butt was like every other Butt I ever smoked. They probably threw them under the Judging table!!!

So, I am proof that ANYONE with Basic BBQ Knowledge can go to a comp and win on their first try. Ain't never been to another comp since. Ain't going to another, either!!!

Just do what YOU do, not what someone else is doing. That way when you win, it was YOUR deal and not something you copied from somone.
