My boy called earlier from the flea market.

I guess he picked up some fresh caught mullet, which smoke up well due to their fatty content.

Mixed up some orange marmalade (I like the orange chunks in it) with some hot mustard sauce to add a little bite.

The wife cooked up some fresh collards from yesterdays market with some ham hocks.

Something a little different after all the meat we see is a welcome change.

Good looking fish, but what was the foil for? Yes I know it's to keep the fish from sticking to the grill...next time don't scale the fish and save the foil.

BBQ mullet...some fine eating.

Thanks all, it was dang tasty!

I place all of my fish on foil for smoking CF.

Fish NEVER (and I do mean NEVER) touches my meat grates.

Still picks up plenty of smoke, and tranfers easily out of the cooker..........

BBQMAN, that mullet looks great.I will not put fish on my grates either,I always place fish in a flat pan,nothing worse than fish flavored ribs the next time you cook Very Happy

I had the same thought that Roxy did. Nice looking meal.

One of the guys that cooks with the team from time to time has a mullet photo game that several of his buddies play when they go to NASCAR races. They try to get as many pictures with them near the mullets.

I try to use local products when I can. We got this sauce at the hot sauce show we did in September.

Good stuff, with lime juice, jalapeno and serrano peppers, mustard etc. and habenero peppers a little further down on the list of ingredients.

Wow that looks great......I miss having smoked shad. Very seasonal fish and hard to get your hands on, but when you do oh man is that stuff good!

I used to catch mullet in the Laguna Madre using a cast net, then smoked them on my old Cook'n Ca'jun bullet smoker using mesquite in my younger and less affluent days. Never glazed them though - that looks really good! Always used foil myself with fish, I tried one of those fish grilling baskets and it's gathered dust in a kitchen drawer ever after.

One spot in South Texas I used to work at had a different definition of 'mullet' - a sales rep coming by to peddle their stuff inviting you to lunch that day meant you had a 'mullet' that day.
