My wife asked me to do ribs for a surprise party last Saturday night. I followed my normal routine for doing baby backs (a modified 3-2-1).
However, I ran into a snag with the dome thermometer in my Big Green Egg. I realized about 1.5 hrs into the cook it was not reading correctly. It was reading ~100 degrees too low, meaning I was cooking at 350 degrees instead of 250. Luckily, I realized what was going on and switched to my Maverick for the rest of the cook. Only one of the racks showed any real sign of burning, so I kept it for leftovers and served up the rest.
Not my best effort, but they got pretty good reviews from the party goers. Here are a few pics.

Braddog, your Ribs look delicious. very nice job. A friend of mine had the same problem with the thermometer in his egg, and realized it the first time he cooked with his ET-73, he was surprised at the difference in the two. |

My Maverick had always been pretty close to the dome thermometer....until Saturday. I'm just a little disappointed that I didn't realize what was happening sooner. I stood around thinking "It's cold so I'll need a little more airflow than usual", but I showed a lot of discipline by not opening the lid to peak. Turns out, I should have peaked sooner!
Oh well, BBQing is about the experience, right?

They look fine to me dude.. I did the same thing with a new smoker at a comp once and by turn in time most of the racks of ribs were over cooked..  _________________ Chargriller Akorn

Hugh;
I guess it was intuition or a gut feel based on lots of cooks on my Big Green Egg. It just felt like it was taking too long to get up to temp, I had the vents open a lot wider than usual, and I was getting lots more smoke than I should.
That's when I finally peaked and decided to double check with my Maverick.
