I did a 7lb butt rubbed down with BBQ Rub (by The Rub Co.) a couple days ago. I put the beans below the butt to catch all the drippings and boy did they turn out good. Smoked the butt at 225 and pulled it at 200.

Rubbed & Ready

Bark anyone?

Beans are done

Looks fantastic, but I would fear those beans would induce instant Cardiac Arrest!! haha I've always wanted to do that, but I'm just worried about how much fat i might wind up getting. I may just do it and not tell my wife!! haha

Whitey,

I simmered the kidney beans until soft in my Dutch Oven and added onion, bell pepper (green, red, yellow), garlic, 1/3 cup of The Rub Company's BBQ rub, and ground sirloin which I browned with The Rub Company's Santa Maria Style Seasoning. Once the beans were soft, I put them into the smoker for 4 hours letting the goodness of the pork drip into them.

I also had some ABT's (bacon wrapped & stuffed Jalapenos) on the top rack with the butt so the bacon & cheese dripped into the beans as well.

Good Stuff!!!
