I didn't use your cheesecake recipe, sorry, but I used your apple filling/topping with my basic cheesecake recipe and it was incredible!

Thank you!

Roxy, you scored another home run with this cheesecake. Had a little downtime, in other words, didn't get to fly to SF this morning due to the snow in Denver Mad , so I made this to while away the hours. Absolutely outstanding!!

It was my wife's birthday this past weekend and she requested I make her this cake for the big day. This time a added a bit more of the caramel topping to the cheese cake.

A shot of the cheesecake when it came out of the oven. Shocked

I used this recipe to take second place at the Canadian Open this past weekend so I guess I can now call it "Roxy's award winning Caramel Apple cheesecake".

I did not top the cheesecake with the final layer of apples but instead I first grilled them on the Treager to give the slices some nice lines before adding them to the caramel sauce to tenderize. I then placed them on the plate and pooled some sauce ontop of the slice of cake and connected it to the apple slices with the sauce.

Glad ya liked it my friend. Most of my recipes are things I have tried somewhere and I got inspired to see if I could make them or figure out how to make them better. For the most part, I build on someone elses foundation which is what most cooks do anyways.

To quote one of our great Canadian Chefs... "Its all about the flavour.."
